To Make & Enchiladas, Just Add... 8 Old El Paso™ corn tortillas, 400g chicken breast chopped in small dices, 150g grated cheese 1) Pre-heat the oven to 180°C (160°C fan-equipped ovens, gas mark 4). Pan fry the chicken in a little oil on a medium heat until it turns golden, juicy and thoroughly cooked. Pour half of the Enchilada cooking sauce over the chicken, add half of the grated cheese and give a good stir, cook for 1 min. 2)Heat the tortillas according to pack instructions. 3)Spoon 1/8 of the filling onto the middle of each warm tortilla, wrap them up and place them fold down onto a lightly greased baking casserole. Pour the remaining cooking sauce on the wraps and top with remaining grated cheese. Bake in the oven for 10 min. Serve the bubbling cheesy enchiladas.
