Chicken & Aubergine Curry Serves 4 Preparation time: 30 minutes Cooking time: 1 hour Ingredients: 1 tbsp vegetable oil 1 medium onion, chopped 8 boneless chicken thighs, diced 2.5cm piece root ginger, peeled and finely chopped 2 small green chillies, deseeded and finely chopped 2 tsp ground cumin 2 tsp ground coriander 1 tsp ground cinnamon 1 tsp paprika 1 large aubergine, chopped 150g Great Scot Yellow Split Peas 450ml chicken stock, hot 2 tsp cornflour 2 tsp cold water 1 tbsp fresh coriander, chopped Method: 1. Heat the oil in a large pan, fry the onion and chicken until lightly browned. Add the ginger, chillies and spices. Cook for 1-2minutes. 2. Add the aubergine, yellow split peas and stock. Bring to the boil, cover and simmer for 50 minutes until the peas are soft. 3. Mix the cornflour into the water until smooth and the stir into the curry with the coriander. Cook for a further 5 minutes and serve with rice or naan.
