Mujadara - Lebanese Lentils & Rice Pescatarian Vegetarian Vegan Gluten-free Dairy-free Affordable, nourishing, and full of tradition, our Mujadara makes a satisfying meat-free meal or side dish. Prep Time: 20 minutes Cook time: 20 minutes Serves 4 people INGREDIENTS: 200g White rice 400ml Water 1 tbsp Bouillon powder 2 tbsp Olive oil 2 Bay leaves 500g Onions, finely sliced 1½ tsp Salt 1 tsp Ground cumin 1 tin Epicure Lentils in Salted Water Flat leaf parsley, finely chopped (to serve) Dairy free yoghurt (to serve) METHOD: Soak the rice for about 20 minutes, then drain the water and add to a large pot with 400ml of fresh water, the 1 tbsp of veggie bouillon powder, 1 tsp of salt, and 2 bay leaves. Bring to the boil and then lower the heat. Simmer covered for about 10 minutes (If there is any water left after cooking the rice simply drain it). Whilst the rice is cooking, heat the 2 tbsp of oil in a large frying pan. Once hot, add the sliced onions. Stir and then reduce the heat to low-medium and cover with a lid. Cook the onions for about 10 minutes, then remove the lid and stir thoroughly. Add 1 tsp ground cumin, and 1/2 tsp of salt and continue to cook the onions without a lid for about 8 minutes. You can increase the heat for crispier onions. Remove the bay leaves from the rice, then stir through the lentils and about 2/3 of the caramelised onions (reserving the remaining 1/3 for garnish). Serve in bowls, top with dairy-free yogurt, more caramelized onions, and a sprinkling of chopped parsley. TIP: Lentils and rice are very freezer-friendly. Transfer leftovers to freezer-safe container/s and freeze for up to 3 months. Allow to thaw in the fridge overnight before reheating.
