Organic Mung Bean Rotini with peas and mint Ingredients - serves 4: 250g Explore Cuisine Mung Bean Rotini 1 tbsp olive oil 200g cooked green peas 10 cherry tomatoes chopped 1 tsp balsamic vinegar to taste Small handful of fresh mint, chopped (reserving a few sprigs for garnish) Salt and freshly ground pepper to taste Cooking Instructions: Pasta: prepare according to above instructions. Toss cooked rotini with olive oil, add peas and tomatoes Mix in the chopped mint, balsamic vinegar add salt and pepper according to taste. Serve garnished with a few mint sprigs.
