Preparation and Usage
Easy pasta preparation - serves 4: Bring 2 litres of water to a boil. Add 200 g Explore Cuisine Edamame & Mung Bean Fettuccine. Reduce heat and simmer for 5-7 minutes. Rinse, drain and serve.

Organic Edamame & Mung Bean Fettuccine with courgette ribbons in a light pesto sauce Ingredients - serves 4: 200g organic edamame & mung bean fettuccine 2 large yellow courgettes, peeled into ribbons with a peeler 80 g pine nuts Ingredients - sauce: 1 large bunch of fresh basil 2 cloves garlic 60 ml of olive oil 2 tbsp pecans 2 tbsp pine nuts 2 tbsp pomegranate seeds 1/2 tsp coarse sea salt Cooking Instructions: Pasta: prepare according to above instructions. Sauce: Peel skin from garlic cloves, and chop into big chunks. Using a food processor, pulse basil, garlic, and nuts several times until finely chopped. Add the salt and olive oil, pulse until blended. Pesto may be thick, so add more olive oil for a looser consistency. Lightly toast the pecans, pomegranate seeds and pine nuts in frying pan. Mix the fettuccine with the sauce, gently fold in the remaining ingredients. Serve immediately.
