Gram, or chana dal, is a member of the chickpea family commonly used throughout the Indian subcontinent and Middle East. Gram Flour is popular in both savoury and sweet dishes and is a vegan egg substitute if mixed with equal quantities of water. Today there is an increasing need for foods free from gluten and other allergens including milk, peanut, egg and soya.

Recipes
Go free from gluten when you bake with our flour. To make your baking also vegan try our suggested ingredient swaps, shown in black. Onion Bhajis 75g FREEE Gram Flour 2 tsp Cumin seeds 1 tsp Ground coriander 1 tsp Turmeric 1/2 tsp Salt 1/2 tsp Mixed spice 4 tbsp Water 50g Potato 100g Onion 5 tbsp Oil 1. Line an oven dish with kitchen paper. 2. Put the gram flour, cumin seeds, coriander, turmeric, salt, mixed spice and water into a large mixing bowl and stir to make a paste. 3. Finely grate the potato and coarsely grate the onion. 4 Tip them into the bowl and stir thoroughly. 5. Put the oil into a frying pan over a medium heat. 6 Take a rounded spoon of the mixture and carefully slide it into the hot pan. 7. Cook the bhaji, turning regularly, until golden brown on all sides. 8. Or cook bhajis in a deep fat fryer according to the manufacturer's instructions. 9. Using a slotted spoon, lift the bhaji onto the prepared oven dish and cover to keep warm. 10. Repeat the cooking process with the remaining bhaji mixture. Gram Flour Pastry Case Oven 180°C, Fan 160°C, 350°F, Gas 4 150g FREEE Gram Flour 1/4 tsp FREEE Xanthan Gum Pinch Salt 75g Butter (or vegan butter) 5-6 tbsp Water Oil, for dish Flour for dusting 1. Rub some oil around the inside of a 20cm/8" round tart 2. Put the flour, xanthan gum and salt into a bowl and stir to combine. 3. Add the butter and using a fork or pastry blender, work the butter into the flour until the mixture resembles breadcrumbs. 4. Stir in enough water to bring together to a soft, sticky dough. 5. Cover and rest for 15 minutes. 6. Pre-heat the oven. 7. Dust the work surface and pastry with flour. 8. Roll the pastry into a circle a 5cm/2" larger than your dish and lift it into the dish or simply press the dough into the dish using your fingers. 9. Prick the pastry all over with a fork. Blind Baking 1. Lay a large piece of parchment over the raw pastry case. 2. Scatter ceramic baking beans (or rice) evenly over the parchment. 3. Bake for 15-18 minutes then remove from the oven and carefully lift the parchment and contents off the pastry. 4. Cook for a further 5-6 minutes. Onion & Bacon Quiche Oven 180°C, Fan 160°C, 350°F, Gas 4 400g Onion, sliced 100g Bacon (or vegan bacon) cubes 3 Eggs (or 50g FREEE Gram Flour + pinch FREEE Xanthan Gum + 250ml vegan milk) Pinch Nutmeg Pinch Salt & pepper 25g Cheese (or vegan cheese), grated Oil for pan 1. Finely slice the onions into an oiled frying pan, add the bacon (or vegan bacon) and cook over medium heat until both have changed colour. 2. Break the eggs into a bowl, add the nutmeg, salt and pepper and beat well. (3. Or whisk the gram flour, xanthan gum, nutmeg, salt and pepper with half the vegan milk to make a smooth paste, then whisk in the remaining milk). 4. Grate the cheese (or vegan cheese) into the bowl. 5. Mix in the cooked onion and bacon (or vegan bacon). 6. Tip everything into the pastry case and bake for 25-30 minutes.
