Double Bean Burgers With Sun-Dried Tomato Mayo (Vegetarian) : Bean patties also have less saturated fat and more fibre than beef patties. Topped with delicious creamy slaw and an unbelievable mayo (trust us on this!). INGREDIENTS: For the burgers: 1 tin Epicure Organic Borlotti Beans in Water 1 tin Epicure Organic Red Kidney Beans in Water 1 tbsp Olive oil 1 Red pepper, finely chopped 1 Onion, finely chopped 1 tbsp Epicure Chopped Garlic 1.5 tsp Ground cumin 1 tsp Chilli powder ½ tsp Garlic Powder ½ tsp Smoked Paprika 50g Oats, blitzed to flour 75g Feta cheese 2 Large eggs 3 tbsp BBQ sauce salt and pepper to season For the slaw: 200g White cabbage, finely chopped 100g Carrot, cut into ribbons 75g Avocado 15g Lime juice 1 Garlic clove 50g Natural yoghurt For the mayo: 80g Mayonnaise 20g Epicure Sun Dried Tomato Puree 4 Burger buns/ciabatta rolls to serve Fresh coriander METHOD : Heat the olive oil in a pan, and add the chopped pepper, onion, garlic and fry over medium heat until soft, about 5-6 minutes. Transfer into a large bowl and add the beans. Using a potato masher, mash the beans until you have a smooth texture with some larger chunks of beans. Now add the remaining ingredients (cumin, chilli powder, garlic powder, smoked paprika, oat flour, feta, eggs, BBQ sauce, salt, pepper). Stir together until everything is combined. Form into patties about 1/3 cup of mixture in each. Place the patties on a baking paper lined tray and bake at 190C for 10 minutes on each side, 20 minutes total. Blend the avocado, lime juice, garlic clove and yoghurt and mix with the chopped cabbage and carrot to make the slaw. Mix the mayonnaise with the sun-dried tomato pure and you are ready to stack your burgers. Slice burger buns/ciabatta rolls in half and smother with the mayonnaise. Next place your burger on the bun, top with a spoonful of slaw and a sprinkling of fresh coriander. TIP: Freeze after cooking, wrapping each patty individually. Try with a portobello mushroom bun.
