Roma Lasagne Serves 3 Ingredients: - 57g butter - 3 tbsp olive oil (keep some to grease the dish) - 1 onion, finely chopped - 1 clove garlic, crushed - 1 large carrot, finely chopped - 227g minced meat (beef or pork) - 227g cooked ham - 75g Roma Tomato Purée - 300ml stock, beef or vegetable - Salt and freshly ground black pepper - 1 glass red wine - 250g Roma Lasagne Sheets - 1 jar white sauce for lasagne - 85g grated Parmigiano cheese Method: 1. In a heavy saucepan melt butter. Add olive oil, onion, garlic, carrot and cook for 5 minutes. 2. Add minced meat and ham and cook until slightly browned. Stir in tomato purée, stock, seasoning and wine. Simmer gently for 40 minutes. 3. Pre-heat the oven to 200°C/400°F/Gas mark 6. 4. Grease a shallow ovenproof dish with olive oil. Spoon a layer of the meat sauce into the bottom of the dish and place lasagne sheets on top (break the sheets if necessary to avoid any overlapping). Cover with a little white sauce and sprinkle with some Parmigiano. Repeat the layers two or three times, finishing with a layer of white sauce. Top with remaining Parmigiano. 5. Bake for approximately 30-35 minutes.
