Roma Fusilli Chicken and Bacon Pasta with Red Wine Serves 2 Ingredients: - 200g Roma fusilli - 1 tbsp olive oil - 1 small onion, roughly chopped - 1 clove garlic, crushed - 175g chicken breast fillet, diced - 50g lean back bacon, diced - 50g mushrooms, sliced - 1x400g Roma tin chopped tomatoes with herbs - 2 tbsp red wine (optional) - 20g parsley, chopped - Roma Formaggio Da Pasta Method: 1. Cook the pasta according to the instructions on the pack. 2. Heat the oil in a pan and lightly fry the onion and garlic for 1 minute. Add the chicken and bacon and cook for a further 2-3 minutes until sealed. 3. Add the mushrooms and stir in the tinned tomatoes and wine. Cover and simmer for 10 minutes. 4. Drain the pasta and divide between 2 warmed serving dishes. Spoon the chicken and bacon mix over the pasta. Sprinkle with parsley and formaggio da pasta and serve.
