Conchiglie al forno con ricotta e panna a heaven-Sent creamy ricotta pasta bake Prep 15 mins, cook 30 mins, serves 2 people 180g Napolina conchiglie 200g Baby leaf spinach 40g Butter, melted 1 Onion, finely chopped 250g Ricotta cheese 250g Mascarpone cheese 2 Tbsps milk Grated nutmeg Zest & juice of half a lemon Salt & pepper 30g White breadcrumbs 1 Place the spinach in a colander and wilt slightly by pouring boiling water over the top. 2 Cook the conchiglie in salted boiling water for 10 minutes. 3 While the pasta is cooking, soften the onion in half the butter. Stir in the two cheeses, milk and lemon juice. Stir over low heat until smooth, then add the chopped spinach. 4 Season well with the nutmeg, salt and pepper. 5 Mix the breadcrumbs with the remaining butter and lemon zest. Season with black pepper. 6 Tip the pasta in an ovenproof dish and stir in the sauce. Sprinkle over the lemon breadcrumbs and bake in the oven for 20 minutes or until golden. Buon appetito! Preparation 13-15 mins For proper Italian pasta (and why would you want anything else?), add pasta to a large pan of slightly salted boiling water and cook for 13 minutes until al dente. If you like your pasta a little - softer, cook for 15 minutes. Drain, smother in sauce and enjoy.
