Wholegrain Spaghetti Bolognese Serves 4 Ingredients 400g Bunalun Organic Wholegrain Spaghetti 50g butter 70g cubed pancetta 1 onion, chopped 2 cloves of garlic, chopped finely 1 carrot, chopped 2 celery stalks, chopped 100g/2 large mushrooms, chopped 2 bay leaves 400g minced beef or lamb 200ml Bunalun Organic Crushed Tomato Passata 200ml red wine 200ml stock Grated nutmeg 200ml cream or milk Grated parmesan to serve Sea salt & ground black pepper Method In a heavy based pan melt the butter & stir in the pancetta, cook for about 5 minutes. Add in the onion & garlic, sauté for a few minutes, followed by the carrot & celery. Lastly add in the mushrooms & bay leaves, cook for about ten minutes over a moderate heat, stirring frequently. Increase the heat in the pan & add the minced meat, breaking up the meat well with a fork, leave to cook until meat begins to brown stirring when necessary. Mix in the Bunalun Organic Crushed Tomato Passata, red wine, stock, a grating of nutmeg, salt & pepper, then bring to the boil. Partially cover the pan with a lid and leave on a very gentle simmer for approximately 1-1 1/2 hours, stirring occasionally to check the liquid levels. Then gradually pour in the milk or cream, stir & continue cooking for 20 minutes. Season to taste with salt & pepper. Cook the Bunalun Organic Wholegrain Spaghetti according to the instructions on pack. Serve altogether with grated parmesan.
