Cuban Picadillo (Gluten-free) This hearty beans-and-rice dish is a true taste of Cuban home cooking and comfort. 20 minutes prep time 40 minutes cook time Serves 8 people INGREDIENTS: 2 tbsp Olive oil 1 White onion, finely chopped 1 Small red pepper, finely chopped 1 tbsp Epicure Double Concentrated Tomato Purée 4 Medium cloves garlic, finely chopped 2 tsp Ground cumin 2 tsp Dried oregano 2 Bay leaves 1½ tsp Salt 1 tsp Pepper 120ml Dry white wine 680g Minced beef ½ tin Epicure Organic Chopped Italian Tomatoes 2 tbsp Worcestershire sauce 60g Epicure Manzanilla Olives Stuffed With Pimiento + 2 tbsp brine 2 tbsp Epicure Surfine Capers 250g Potato, cut into 1/4-inch cubes TO SERVE Rice METHOD: Heat 2 tbsp of olive oil in large frying pan over medium heat. Add the onion and pepper and cook, stirring occasionally, until softened. Add the 1 tbsp of tomato paste, garlic, 2 tsp of cumin, 2 tsp of oregano, 1 ½ tsp salt, 1 tsp pepper, and bay leaves and cook gently stiring for 2 minutes. Add 120ml of white wine and cook until reduced (about 5 minutes) Add the 680g of minced beef and stir, breaking up chunks, until no longer pink. Add ½ tin of tomatoes, Worcestershire sauce, 60g olives and 2 tbsp brine, 2 tbsp capers, and the chopped potato. Cover and reduce heat to low, cooking until the potatoes are tender, (about 20 minutes). Before serving season to taste with salt and pepper and remove the bay leaves. Serve with white rice and black beans. TIP: This recipe is freezer-friendly. Transfer leftovers to freezer-safe container/s and freeze for up to 3 months. Allow it to thaw in the fridge overnight before reheating. You can reheat this dish in the microwave with a few splashes of water.
