Recipe Ideas Ginger & Rhubarb Nests Ingredients 2 meringue nests 2 ball stem ginger, grated 200g/7 oz mascarpone 2 stalks rhubarb 1 tbsp caster sugar half tsp cinnamon half tsp ginger syrup How to Prepare 1. Place the rhubarb, sugar, cinnamon and ginger syrup in a small saucepan. Simmer for 5 minutes until stewed. 2. Place the meringue nests on 2 plates. 3. Combine the grated stem ginger with the mascarpone. 4. Divide the ginger mascarpone between the two nests. 5. Top the ginger mascarpone with stewed rhubarb and serve. Chocolate Blackberries Ingredients 570ml/l pint double cream 50g/2oz light muscovado sugar 2 tbsp cocoa 4 meringue nests 450g/llb blackberries, plus 225g/8oz to serve Icing sugar for dusting How to Prepare 1. Whip the cream until it holds its shape, then stir in the sugar and sift in the cocoa. 2. Break up the meringue nests into small pieces and lightly mash the blackberries with a fork. Stir both lightly into the cream. 3. Line a 23cm/9 in cake tin with cling film. Spoon in the dessert mixture, pressing it into the corners, then gently smooth the top. Cover and freeze until firm, about 4 hours. 4. An hour before serving, transfer the dessert from the freezer to the fridge. When ready to serve, turn onto a flat serving plate, dust the top with sifted icing sugar and scatter blackberries over the top. Chill until ready to serve.
