Shopping list - 1 Onion - 2cm Piece of ginger - 4 Chicken breasts - 200g Chopped tomatoes - 400m/coconut milk - Fresh coriander Comforting chicken curry for 4 1 Fry diced onion in 3 tbsp of oil until soft. Add the finely chopped ginger with 1/2 a jar of spice paste and sizzle to release flavours. Cook for 2 mins, add 50ml water and cook until evaporated. 2 Add diced chicken and sear, then loosen with the tomatoes and ripple through the coconut milk. Simmer uncovered for 15 mins until the chicken is cooked through. Garnish with fresh coriander to serve. Try with 1/2 a cauliflower cut into florets and add 1 diced courgette to the simmering sauce.
