Ingredients: 4 chicken breasts, diced 1 onion, chopped 1 large potato, chopped 1 red pepper, chopped 400g can Roma chopped tomatoes 400g can Batchelors mixed beans drained 1 pinch of freshly chopped parsley How to prepare: 1. Pre-heat oven to 180°C/350°F/Gas mark 4. Brown the chicken and onion in a little oil on the hob. Add the remaining ingredients and transfer to a casserole dish. 2. Blend the Erin Meal Time Chicken Casserole mix with 425ml (3/4 pint) of cold water. Pour over the chicken mixture and stir. Cover and cook in the oven for 1-1 1/2 hours until chicken is fully cooked.
